Wax Concept, beeswax drops for oil and fat binding, 500 g

The Sosa wax concept is a fat-soluble emulsifier that is dissolved at 65°C in the fatty base mass to be used. Aqueous media can then be incorporated until the desired creaminess is achieved (e.g., cream in chocolate for ganache). It works similarly to Sosa's Glice. The recommended dosage is 3% of the final product. Uses: • For praline fillings made from pure nut pastes, fruit purees, and chocolate • To thicken oils for stable desserts/venaigrettes • To protect any crunchy product (e.g., freeze-dried vegetables) from moisture • To stabilize ganaches
