The direct juice for this nectar is obtained from Constantinople apple quinces and individual Portuguese pear quinces, harvested from trees up to 60 years old in the Lower Rhine and Münsterland regions. This almost forgotten fruit variety is now celebrating a triumphant return to fine dining thanks to its captivating and complex aroma. At the van Nahmen cider and private winery in Hamminkeln, Rhineland, fruit processing has a long tradition. Nothing is removed from the juices and nothing is added: no preservatives, no flavorings. Particular attention is paid to the use of heirloom fruit varieties and thus also to the preservation of traditional, endangered cultivated varieties.
