A tomato serum produced as a concentrate from tomatoes that have been ripened to perfection and gently reduced. This process highly concentrates the natural glutamic acids contained in the tomatoes. This "Umami" tomato serum, with its mild acidity yet full-bodied and the sweetness of sun-ripened tomatoes, preserves the natural flavor of the base products and rounds off dishes. Dosage: A few drops are sufficient (0.4–1.2%); for example, 1 teaspoon of tomato serum is sufficient to round off 1 liter of broth. Perfect with pasta, dark and light sauces, salads, vegetables, and soups—boiled or clear.
