A paste with 80% tamarind. Tamarind belongs to the carob family and is originally an African spice that now plays an important role in the cuisines of other continents. The sour and fruity flavor of tamarind combines excellently with the heat of chilies and gives many South Indian dishes their characteristic hot and sour taste and dark color. In India, tamarind is usually combined with meat or legumes. Worcestershire sauce also contains tamarind.
