Hearts of palm are the tender interior of the so-called vegetative cone, from which the bases of the palm fronds of various palm species develop. Their delicate flavor is reminiscent of sautéed artichokes and pairs well with salads and seafood dishes. They are also delicious baked or served with a béchamel sauce on cooked ham. They are most easily served in thick slices with vinegar and oil.
