Morsweet - powdered glucose syrup, dextrose, 5 kg
This glucose powder is used in the canning industry, confectionery, and fine bakery, as well as in the production of ice cream, candy, and sorbets. According to the manufacturer's instructions, the powder content is approximately 4% of the total mass. For 1 kg of total mass, this amounts to 40g of glucose powder. You then subtract the 40g from the original required amount of sugar. Instead of 800g of fruit puree and 200g of sugar, use 800g of puree, 160g of sugar, and 40g of glucose powder. Mix the sugar and powder together and process as usual.
