Almond trees belong to the rose family. A fundamental distinction can be made between sweet and bitter almonds. Sweet almonds are the best-selling and popular with confectioners. They have a delicate texture and a characteristic sweet flavor. Marzipan is used to make them, among other things. Raw bitter almonds are highly poisonous due to their cyanide content and can be fatal! However, cooking or baking evaporates the cyanide, and the bitter taste disappears. These almonds are blanched, meaning the brown skin has been removed with boiling water.
