Locuzoon (carob bean gum), Biozoon, E 410, 250 g

Locuzoon® consists of locust bean gum (E 410). In cold liquids, it acts as a thickener similar to xanthan gum for processing dairy products, desserts, fruit preparations, as well as dressings and sauces. If Locuzoon® is dissolved in a little cold water and stirred thoroughly into boiling hot liquids, a heat-stable gel forms upon cooling. Locuzoon® is active over a wide pH range, meaning it can also be used for acidic liquids and is not very sensitive to high ion or salt concentrations. In frozen gels, Locuzoon® delays the formation of crystals, thus ensuring a more pleasant mouthfeel in frozen products. Locuzoon® works well in combination with Xanthazoon®, which can form a strong gel network.
