Here's a great recipe for Liegnitz gingerbread: Melt 300g honey, 250g sugar, and 125g butter; mix with 5 tablespoons water, 125g ground almonds, and 150g currants, then chill. Stir in 2 tablespoons gingerbread spice, 3 eggs, 50g cocoa powder, 500g flour, and 5g each of ammonium carbonate and potassium carbonate dissolved in water until the dough is firm. Sprinkle the freshly baked gingerbread with chocolate sprinkles.
