These olives are preserved in brine and unseasoned. They are suitable for salads or as a side dish, as their mild flavor doesn't distract from the main dish. They are approximately 4 cm in size. Green olives are picked while still unripe. Before being placed in brine, they are treated with lye. This process reduces the bitterness of the unripe fruit and improves the texture of the flesh.
