Freekeh (Farik, Frikeh, Firik) green, roasted wheat, Abido, 500 g
Freekeh is the Levantine equivalent of our green spelt. It is also harvested unripe (green), but is not spelt, but wheat. To dry the grain, it is roasted in a large pan over a fire. This creates an aromatic, nutty flavor. In North African countries like Egypt and Morocco, it is a kitchen staple and can be used wonderfully in soups, stews, salads, and as a rice substitute.
