Traditionally, these are duck legs, pre-cooked and marinated in their own lard, raised and fattened only on grain. This makes the meat extremely tender and juicy. To prepare the duck legs, the lard is roughly removed and the legs are heated in a pan or oven. The remaining lard is wonderful for preparing dishes like fried potatoes—so don't throw it away!

Preserved duck leg meat. Ingredients: Duck legs, duck fat, salt. Store at +2°C to +4°C. Refrigerate after opening and consume promptly. Preparation: Heat in a water bath for 20-25 minutes, then brown in a pan for 3 minutes on each side.
