To smoke, sprinkle the fish with the marinade and let it rest in the refrigerator for 30 hours. After rinsing, brush the fish with whiskey, gin, or rum, let it dry for another 24 hours, and then smoke. Then, let the smoked fish air dry for 24 hours to develop its full flavor.
