Calazoon (calcium lactate), Biozoon, E 327, 400 g

Calazoon® is calcium lactate (E 327) and is used as an excipient for various texturizers (alginate, gellan, and iota) that require ions (calcium or potassium) to form gel structures. These gels are perceived as particularly heat-stable, firm yet flexible, or fast-gelling, and these properties make them attractive for the catering industry. For some preparations, calcium- or potassium-rich ingredients such as milk or sour whey are sufficient. For special applications, such as the formation of gel capsules, the calcium or potassium concentration must be higher than in most common kitchen ingredients. These applications require Calazoon®, which is characterized by a very mild and pleasant flavor. In addition to the calcium ions, which are important for the preparation technique, the salt residue can significantly influence the sensory perception of the salt solution (slightly bitter, salty, mildly acidic) and the reaction rate. The reaction speed is important when forming capsules, since the viscosity of the capsule mass and the speed of gel formation can control the success of round shapes.
