Basic recipe for sponge cakes: Beat 1 kg of sponge cake mix, 750 g whole eggs, and 50 g water together on high speed for 10 minutes, then process further.

Ingredients
Baking mix for making fine sponge cake bases with a very even crumb and long shelf life. Ingredients: Sugar, WHEAT FLOUR, WHEAT STARCH, emulsifiers: polyglycerol esters of fatty acids, mono- and diglycerides of fatty acids, modified starch, raising agents: diphosphates, sodium carbonates, dried glucose syrup, skimmed MILK powder, salt, thickener: xanthan gum, enzymes. Directions: Whisk all ingredients together for 5 to 8 minutes using a fine whisk. The liquid weight should be 350 to 380 g. Store in a cool, dry place.
