These bamboo mats are used to roll the typical Japanese maki sushi. To do this, a nori sheet is placed on the rolling mat and the sushi rice is spread evenly. Then the filling is placed on top and the whole thing is rolled up using the bamboo mat. This requires a bit of finesse, but it usually works quite quickly.
