Maple sugar, 1 kg

Maple sugar is sugar obtained from the sap of the sugar maple tree. The sap is extracted by tapping the trunks, and evaporation first produces maple syrup. Further evaporation causes the sugar to crystallize. Sometimes slightly granular to powdery, this sugar is ideal for sweetening beverages and baked goods. In its purified state, maple sugar is identical to ordinary sugar in terms of composition and properties. Its aroma is reminiscent of licorice/caramel. However, it is not suitable for making crème brûlée. Under intense heat, the sugar first begins to bubble, then immediately burns.
