A distinct maple aroma, caramel, and brown sugar flavors are also present. The largest quantity of pure maple syrup sold for any one grade is Dark Robust, so it is often considered "mass-market" quality. Sometimes there is a slight burning sensation in the back of the throat compared to Amber Rich Maple Syrup. It should not be bitter or overpowering. Preferred by some for table use, but its strong flavor is best suited for cooking. It is the darkest consumer grade available. Try substituting "Dark Robust" maple syrup for sugar in recipes, or pour it over oatmeal, into cold cereal, and as a sweetener in cooking.
