Production: The organic soybeans from our own organic farm are blended with organic wheat and rye malt, as well as brine from Bad Ischl. They are then stored in oak barrels for at least seven months, during which time a fermentation process takes place. Following this, the beans are pressed. The fermented beans are pressed for 24 hours in a basket press. In addition to the resulting organic soy sauce, the press cake remains. This is then slowly and gently dried and finely ground.
